How to edit text/dialogue of a translated and patched PS2 iso?

I'm trying out the translated and patched PS2 version of Dragon Quest V made by the DQTranslations group. All I want to do is edit enemy names to what I'm used to with the modern western releases of DQ. Example: Want to change Horned Rabbit to Bunicorn. Or Mallet Gopher to Hammerhood.
Is there a file I can edit or program to use?
