Bootcamp, parallels, virtualbox/vmware or hope one was written in Java (I am not aware of any). You should be able to find a general purpose hex editor, though probably not as nice as hex workshop, 010 and winhex, but any that are remotely aware of tables and sport ROM hacking type feature are rather thin on the ground as far as OSX versions go.
ROM hacking has long been and seems to want to remain a Windows, preferably one that has a decent 16 bit subsystem as well as easy visual basic, affair. Get a real computer next time or run a virtual machine/dual boot.
