After FMV games, the second most common type of games on the Mega CD was quick cash-grab Megadrive games upgraded to Mega-CD with the Redbook audio as the sole addition. Has it been attempted by the hacking community?

(A friend of mine has mentioned how cool it would have been to have Moonwalker with Redbook audio. I must say it sounds like a great idea, but I'm not the one to do it unfortunately.)

Yes, it's been done before. There is a MegaCD version of the original Sonic.

It's also been done for Rock 'n Roll Racing.

It had? I thought it was an MSU-1 hack of the SNES version (though, due to the original music being licensed, requiring the user to get the audio themselves to avoid inciting RIAA watchdogs).

Yeah, by bonemagee. And you had to get the music yourself for that one as well. :)
