How do you find them?

Pointer tables on SRPGs are usually on top of their block of text. You'll usually see a pattern, like D7 75 DA 75 DE 75 EE 75 F9 75.

You can always try using a debugger, and tracing back to the adress where the text is being read from.

I could be wrong but i believe that game uses a scripting engine. Pointers to text may be embedded in that scripting code.
