Looking for a text dumping util

Hi, I've recently been on the search for a good text dumping utility. I've looked through just about all of the programs on the site, but none of them fit my needs. Basically what I'm looking for is a program that will take in a table file and use that to dump the text from another file. The files that I'm working with are more or less text files with a few control codes and a custom encoding. I could just copy and paste the text from a hex editor with the table file to give to my translators, but I'd rather not do that with nearly 3000 files(so batch processing is a big plus!!).

You want romjuice (simple but limited) or Cartographer (complex but flexible).
In the event of a firestorm, the salad bar will remain open.
