Actually, I've noticed one thing you CAN do without hacking.
Setting the language to Japanese enables entering your player's name in Japanese when starting a new game.

Too much text to post here. Each file in the strings folder is named like this.
Elsewhere there's viewable Japanese letters, in some of the game's NFTR fonts.

Toby Inc? I missed that when poking around the game. Google brings up obscure random companies...

I was on a Frogger kick, and stumbled on something more pleasant than a crocodile spawning to ruin that last hop to safety. My Frogger Toy Trials has text that appears to be from a never released Japanese version! Any insight on this, and if it's complete enough to try to enable?

Look for .jp.sdf files in the data/strings folder.

Compare the music for Disney's Magical Quest.

This can be sparse for languages few members are familiar with.

This is tougher to look right than I'd expected. The remake awkwardly tacked Secret of Mana, in English at that, onto the Japanese title.

I believe this would be a region free title, as it was made before the release of the DSi, which was Nintendo's go at region locking their handhelds.

The iQue DS was a little earlier, but has only about 5 translated games.
And the lockout is so feeble that patching the ROMs takes literally one byte.

But a personal save file for a single player game, even if it is in the cloud, can't affect anyone else. I wonder what the law is all about.

Save files can be used as exploits, and arbitrary code execution is an avenue to piracy.

Castlevania The Dracula X Chronicles. Features updated versions of Rondo of Blood and Symphony of the Night.

Mega Man Maverick Hunter X. A fun SNES remake, with bonus anime movie.

The Legend of Heroes Trails in the Sky. Long story-driven saga. While better on PC (and the 3rd chapter is PC-only in English), portability may make it more digestible.

Burnout Legends. Acclaimed smash and bump brand of car racing.

Ys The Oath in Felghana. Turns the mediocre Wanderers from Ys, into one of the best games in the series!

I could be wrong, but I don't think after all this time MAME has ever supported arbitrary or hacked roms.
It uses a database of required files and their checksums. Something like that.

Somewhat closer to the Japanese text is good. I'm not attached to Square's old translations.

Pokemon, hm? I'd love to see a more thorough RBY script de-localization if not done before. But it might be tricky. Some Pokemon have names whose original meaning and pronunciation alike already approximate well to English (Mewtwo), others sound weird. Articuno's Japanese name translated too literally would no doubt be the target of jokes about DBZ's Frieza. :P

It didn't quite dawn on me until now Pokemon Puzzle Challenge has little to do with the N64 game either, different developers and stuff. Probably a good thing. Fond as I am of the Kanto anime season, Johto was adapted worse from the start.

Enable the hidden Panel de Pon options menu.

Do you happen to have it in kanji? It's a tad difficult to translate it with just hiragana because there are way too many different meanings it could have. Kanji is a kind of like the word, while hiragana is mostly the sound. If you have one with kanji, I'll be more than willing to help  :).

Most NES games don't have kanji in the original script.

No. PS4 and Xbox One were only digital in Japan.
Though the USA versions are physical, and added an option to play the games in Japanese.

Does anybody know how to hack the NES version of the Legend of Zelda to have the music and sound effects of the Famicom Disk System version?

Not trivial to do. The disk drive has expanded audio hardware.

Their prevalence online has me worried.
